- 2 aubergines
- Extra Virgin Olive Oil
- Oak Honey
Wash the aubergines and cut them in shreds or slices
Leave them in water with salt for 15 mins. We drain and dry them.
We flour them and fry them with Extra Virgin Olive Oil. The Olive Oil needs to be very warm in order for the aubergines to cook well without absorbing the oil.
Once they look golden, we take them out and leave them over kitchen paper.
Once they are fried, we serve them on a platter and we spread some Oak Honey over them.
